Not your Grandma's Beets

Most of us grew up with pickled beets and if you're like me discovered as adult beets can be prepared like other root vegetables like potatoes or carrots. These nutrient rich vegetables contain belatins which offer antioxidant and anti-inflammatory benefits. They are also high in fiber, nitrates and potassium and will give you some great health benefits and offer a tasty addition to your meals - whether roasted or steam - add to your salads, as a side or a topping. Be sure to eat in moderation as too much of their oxalates could lead to kidney stones for some.
